Fresh Salmon caught just for you!
(the one in the middle is the salmon)
Broiled Salmon with Dill Sauce
(Serves 6)
6 boneless salmon fillets - about 6 oz each
Salt and freshly ground black pepper to taste
1/3 C. light or nonfat sour cream
2 T. pure maple syrup
1 T. Dijon mustard
1 T. freshly squeezed lemon juice
1 T minced fresh dill
1 tsp grated lemon zest
-Preheat broiler. Sprinkle salmon fillets lightly on both sides with salt and pepper.
-Place salmon on a baking sheet that has been sprayed with cooking spray. Broil 4 to 6 inches from heat source for about 4 minutes per side, or until fish flakes easily but is still just slightly pink in the center.
-While fish is cooking, prepare sauce. In a small bowl, whisk together sour cream, maple syrup, mustard, lemon juice, dill, lemon zest, salt, and pepper.
-Remove salmon from over and drizzle with sauce. Serve immediately.
OVEN SALMON FILLETS
1 Salmon fillet
2 C. fresh lemon juice
1 cube butter
1 t. fish seasoning of your choice
1/4 C brown sugar
Black pepper to taste
Lemon zest
Place fillet on foil. Drizzle lemon juice over fillet. Drizzle melted butter over fillet and top with seasoning, lemon zest, and brown sugar last. Cook salmon until the fish just starts to flake and open up a bit. serve with lemon wedges and enjoy.

Never ever did I think I'd be saying this about fish, but that dill recipe sounds YUMMY! We'll have to try that one next! Oh, and if the one in the middle is the Salmon, what does that make the one on the right???
